DRINKS FOR THE HOLIDAYS

Cocktails are a significant addition to any holiday occasion. Here are some of the most traditional and contemporary selections for an extra special touch.

ALEXANDER (Each drink)
1 oz Brandy or Vodka 30 g
1 oz Cream 30 g
1 oz Creme de cacao or Kahlua 30 g

Shake with crushed ice and strain into cocktail glass.

BELLINI CHAMPAGNE COCKTAIL
3/4 Champagne or Sparkling Wine 3/4
1/4 Peach Nectar 1/4

Slightly shake together and pour into champagne flutes.

BLACK RUSSIAN (Each drink)
2 oz Vodka 60 g
1 oz Kahlua (coffee liqueur) 30 g

Pour over cracked ice in an old fashioned glass and stir.

CHAMPAGNE COCKTAIL (Each drink)
1 small Sugar cube 1 small
dash Bitters
1 twist Lemon and Orange peel 1 twist
Champagne

In a champagne glass place the lump of sugar, bitters, orange and lemon peel and fill with ice cold champagne.

CHAMPAGNE PUNCH (Makes 96 oz [3 L])
25 oz Champagne or Sparkling white wine 710 g
6 oz Cointreau 178 g
8 cups Canada Dry Ginger ale 2 L
Orange or lime slices, for garnish

Pour champagne, cointreau and ginger ale into punch bowl. Garnish with fruit slices or add Ice Ring.

Ice Ring
Fill a 3 or 4 cup [750 to l L] ring mold with sugar free ginger ale. Freeze. Do not use ginger ale with sugar as it melts quickly.



CHRISTMAS PUNCH [Makes 18 cups [4.5 L] NO ALCOHOL
8-3/4 cups Cranberry cocktail 2-1/4 L
8-3/4 cups Lemon-lime soft drink 2-1/4 L
12 oz Frozen concentrated lemonade, thawed 340 g
Lime and orange slices, maraschino cherries for garnish

Stir cranberry cocktail, lemonade and lemon-lime soft drink together in punch bowl. Float fruit slices or cherries on top.

COSMOPOLITAN (Each drink)
1 oz Vodka 30 g
1/2 oz Triple Sec 15 g
1/2 oz Fresh lime juice 15 g
1/2 oz Cranberry juice 15 g

Combine all ingredients in a shaker with ice cubes. Shake for at least 10 seconds to get that beautiful pink color, strain into martini glass. Garnish lime slice.

EGGNOG (serves 12)
1 fifth Whiskey or rum 1 fifth
8 Eggs, separated 8
1/2 lb Sugar 225 g
1 pint Whipping cream 1/2 L
1 quart Milk 1 L
Grated nutmeg

Beat egg whites and yolks separately, add the sugar to the stiffly beaten whites. Add whiskey or rum to yolks along with cream and milk. Fold in whites and chill. Top servings with grated nutmeg.


GIMLET (Each drink)
2 oz Gin or Vodka 60 g
1/2 oz Lime juice (sweetened if desired) 15 g

Shake with ice and strain into cocktail glass.

GRASSHOPPER (Each drink)
1 oz Green creme de menthe 30 g
1 oz White creme de menthe 30 g
1 oz Cream 30 g

Shake with cracked ice and strain into a cocktail glass.

HARVEY WALLBANGER (Each drink)
1 oz Vodka 30 g
1 oz Galliano 30 g
Orange juice

Fill tall glass with ice cubes and pour in enough orange juice to fill glass 3/4 full. Add vodka and stir. Float Galliano on top and serve.

HOT BUTTERED RUM (Each drink)
2 oz Dark rum 60 g
Twist of lemon peel
1 stick Cinnamon 1 stick
2 Whole cloves 2
1 pat Butter 1 pat

Boiling hot cider or water. Combine rum, lemon peel, cloves and cinnamon in a pewter mug or heavy mug. Fill with water or cider.

HOT TODDY (Each drink)
1-1/2 oz Whiskey or rum 45 g
1 tsp Sugar 5 mL
1 stick Cinnamon 1 stick
1 Lemon slice 1
4 Whole cloves 4
Boiling water

Fill mug 2/3 full of boiling water. Stud lemon slice with cloves and place in mug of water and add sugar, cinnamon stick and whiskey or rum. Stir and serve with spoon.

MANHATTAN (Each drink)
2 oz Whiskey, rum or brandy 60 g
1/2 oz Sweet Vermouth 15 g
1 dash Bitters 1 dash

Shake with ice and strain into glass. Garnish with cherry.


MARTINI (Each drink)
2 oz Gin or Vodka 60 g
3/4 oz Dry Vermouth
(or 1/2oz [15 g] or for extra dry Martini)
22 g

Mix with ice and strain into glass. Garnish with twist of lemon or olive.

PLANTERS PUNCH (Serves 17)
1 fifth Whiskey or rum 1 fifth
1 cup Lemon juice 250 mL
3/4 cup Grenadine 175 mL
1 tsp Bitters 1 5 mL

Stir with ice in a large pitcher. Pour over ice cubes in highball glasses and garnish with orange slices and pineapple sticks.

SCREWDRIVER (Each drink)
2 oz Vodka 60 g
Orange juice

Place vodka in highball glass with cracked ice, fill with orange juice and stir.

SINGAPORE SLING (Each drink)
2 oz Vodka or gin 60 g
1 oz Cherry brandy 30 g
Juice or 1/2 lemon
1 tsp Sugar 5 mL
Soda

Shake with cracked ice and strain into a tall glass. Fill with soda and garnish with slice of orange and a cherry.

WHISKEY SOUR (Each drink)
Juice of 1/2 lemon
1/2 tsp Sugar 2 mL
1-1/2 oz Whiskey, scotch, brandy or gin 225 g

Shake with crushed ice and strain into sour glass. Garnish with slice or orange and cherry.
