Baked Ham with Apricot Glaze
This recipe is one of our favorite ways to prepare ham. It's fantastic for the holidays, because it looks just as good as it tastes. Decorate plate with parsley and apricot halves studded with Maraschino cherry. Serves 12.
|6 lb||Precooked Ham||2.7 kg|
|1/2 cup||Apricot Jam||125 mL|
|1/2 cup||Brown sugar||125 mL|
|1-1/2 tbsp||Cider vinegar||25 mL|
|1 tsp||Prepared mustard||5 mL|
|1/8 tsp||Ground cloves||0.5|
Preheat oven to 325°F [150°C].
Place ham in foil lined roaster, cut side down.
Bake about 2 hours or internal temperature reaches 130°F [55°C]. Remove ham from oven and brush Apricot glaze over top and sides of ham. Increase oven temperature to 350°F [175°C] and further bake ham, uncovered for about 30 minutes, basting with glaze every 10 minutes. Ham should be baked to an internal temperature of 140° F.
Remove from oven and allow to rest for 10-15 minutes before serving. Serves 12.
Note:I recommended placing a cut ham or spiral ham, cut side down - this enables the glaze to be applied to the entire exterior of the ham, makes the ham stable in the roaster, and allows the cut portion of the ham to stay moist and roast in the glaze accumulated in the bottom of the roaster. Use the liquid in the bottom of the roaster to make a sauce; add water and a squeeze of lemon if too sweet.
Mix all ingredients in small saucepan. Heat and stir until hot and mixed well.
