QUICK AND EASY CHINESE FRIED RICE


Here's an opportunity to use leftover rice and bits of leftover meat. Serves 2 main servings or 6 side dishes

Chinese Fried Rice


1 Egg, beaten 1
1/4 cup Vegetable oil 50 mL
1/2 cup Red Pepper, chopped 125 mL
3 - 4 Sliced fresh mushrooms 3 - 4
2 cups Cold Fluffy White Rice 500 mL
2 tbsp. soy sauce 25 mL
1/2 cup * Diced cooked ham 125 mL
2 green onions, chopped 2
1/2 cup ** frozen petite peas, thawed 125 mL


In small non-stick skillet make an omelette, cut in shreds and set aside.

In a large skillet, heat oil, add red pepper and mushrooms; stir-fry for 4 minutes

Add rice and stir-fry until rice is hot and mixed with oil. Add soy sauce; mix well. Stir in ham, green onions, peas and shredded omelette. Heat thoroughly.

NOTE: * Other cooked meats such as chicken, shrimp or crab meat make nice substitutes.
** When buying frozen peas, look for petite or baby peas, which are more flavorful and tender.
