STEAK SAUCE PROVENCAL


Turn a simple BBQ steak into a gourmet steak by topping it off with this wonderful sauce. Makes enough for 2 steaks.

2 tbsp Butter 25 mL
2 tbsp Green onions, chopped 25 mL
1 Garlic clove, finely chopped 1
2 tbsp Dry Sherry 25 mL
1 medium Tomato, peeled, seeded & chopped 1 medium
Few sprigs of Parsley, chopped
Salt & Pepper to taste


Heat butter in pan, sauté green onion and garlic for about a minute. Add sherry, reduce by half; add tomato and parsley. Cook until just hot; do not let the tomato pieces loose their shape. Season with salt and pepper.
