This sauce is made using strained tomatoes, known as Passate Di Pomodoro in Italian.

2 tbspExtra virgin Olive oil50 mL
2Cloves garlic, minced or finely chopped2
1/2 onionfinely chopped onion1/2 onion
1-1/2 cupsStrained tomatoes375 mL
1/2 tspOregano2 mL
1/2 tspDried basil2 mL
Salt & Pepper to taste
1/2 tsp Sugar 1/2 tsp

Heat oil in a medium size saucepan. Sauté  onion until softened but not brown, about 3 to 5 minutes, add garlic and cook stirring for another minute.  Remove pot from heat, add  Strained tomatoes

Stir in basil, oregano and sugar,  simmer gently, uncovered for 30 minutes, stirring occasionally.  Taste and add salt & pepper if needed.

Set aside until cooled or place in container and refrigerate.

Using back of a large spoon, spread a thin layer of cooled sauce over your pizza dough.
