An outstanding honey mustard dressing to accompany your spinach salad.
Serves 4

3 tbsp Cider vinegar 50 mL
3 tbsp Honey 50 mL
6 tbsp Mayonnaise 75 mL
1 tbsp Dijon mustard 15 mL
1 tbsp Finely minced onion 15 mL
1-1/2 tbsp Chopped fresh parsley 17 mL
pinch Salt pinch
3/4 cup Vegetable oil 175 mL
6 cups Fresh spinach 1-1/2 L

Heat vinegar and honey in heavy small saucepan over low heat, stirring until honey dissolves, or microwave it until honey is dissolved. Pour into bowl and cool. Whisk in mayonnaise, mustard, onion, parsley and salt. Gradually whisk in oil. Can be prepared 3 days ahead. Cover and refrigerate. Bring to room temperature before using.) Toss with chopped fresh spinach.

I sometimes add about 4 crumbled slices of bacon.
