GREEN SALAD WITH PEARS AND CASHEWS

Wonderful healthy salad.  The blend of flavors is delicious. Serve 4 to 6
1 headRomaine lettuce and/or red leaf lettuce1 head
1/2 cup Goat Cheese 125 mL
1 cup Cashews toasted for 10 min. at 325°F (160°C) 250 mL
1 Pear, thinly sliced 1

DRESSING
Vinaigrette
1 Minced garlic 1
1/2 cup Extra light virgin olive oil 125 mL
3/4 tbsp Apple cider vinegar 13 mL
2-3 tbsp Dijon mustard 25-50 mL
Salt & Coarsely Ground Pepper to Taste
Other
1 tbsp Melted butter 15 mL
2 tbsp Brown sugar 25 mL
1/2 tsp Curry powder 2 mL
1/4-1/2 tsp Cayenne pepper 1-2 mL

Arrange salad mixture on a flat plate.

Mix together the two dressings and pour over salad when ready to serve.
