Simple calico coleslaw with a light tangy dressing. Serves 4
cole slaw

14 oz bag of cole slaw mix 400 g
1/2 apple, unpeeled, cored and finely diced 1/2
2 tbsp Mayonnaise 30 mL
1 tbsp Cider vinegar 15 mL
1 tbsp Olive oil 15 mL
1 tsp Sugar or honey 5 mL
1 tsp Dijon or yellow mustard 5 mL
1/4 tsp Salt 1 mL
1/4 tsp Celery Seed 1 mL
1/8 tsp Pepper .5 mL

In a large bowl toss apple and slaw mix. In a small bowl or jar, add the dressing ingredients and mix or shake well. Pour on slaw and toss. Refrigerate for about 1 hour.
