ARTICHOKE SALAD

Makes a wonderful first course for your next dinner party. Artichoke, celery hearts and almonds mixed with a mayo and ketchup dressing; served on lettuce leaves.  Serves 4.

14 oz can Drained & chopped artichoke (not marinated) 398 mL
2 tbsp Mayonnaise 25 mL
1 tbsp Ketchup 15 mL
2 Celery Heart stalks 1/2-inch [1 cm] pieces 2
1 oz Almonds slivered 30 g
Salt & Pepper to taste
1 tbsp Olive Oil 25 mL
1 tsp Fresh parsley chopped 5 mL

Combine all ingredients and chill for at least 1/2 hour.

Serve on leaves of lettuce. I usually use Boston lettuce, but any kind will do.
