Mashed Potato a la Quebecoise

Easy and not so rich version for mashed potatoes. Obtained from The dairy farmers of Canada. Serves 8-10

8 Slices of bacon 8
5 lbs Potatoes, peeled and quartered 2.5 kg.
1 cup Milk 250 mL
4 tbsp Butter 60 mL
3 tbsp Chives or green onions 50 mL
2 tbsp parsley 25 mL
Salt and Pepper to taste


Cook bacon until crisp. Dry on paper towel and chop finely. Set aside.

Cook potatoes and drain. Mash and stir in butter and milk. Season to taste. Transfer to serving platter and sprinkle with chives (or green onions), bacon and parsley.
