Bubbles and Squeak is a popular British Dish which consists of mashed potatoes mixed with some type of green vegetable, usually cabbage and fried in a pan. Serves 6-8

3 lbs Russet potatoes (about 6), peeled, cut into chunks 1.5 kg.
1/2 cup Milk 125 mL
1/4 cup Butter (1/2 stick), melted 50 mL
Salt & pepper to taste
1/2 head green cabbage, shredded 1/2 head
2 Large cloves garlic, crushed 2
1 Onion, thinly sliced 1
Butter or oil for frying

In large saucepan, cook potatoes in boiling lightly salted water until tender, 10 to 15 minutes. Drain well and return to pan. Shake pan over low heat to dry potatoes of excess moisture. add milk, butter and salt. Use a potato masher or fork to coarsely mash, not a mixer or ricer as the potatoes will become gluey. Taste and add pepper and a bit more salt if needed.

While potatoes are cooking, In a large frying pan heat butter/oil over medium heat. Fry sliced onions and cabbage until soft and lightly browned, about 8 minutes Add garlic and continue sauteing for 2 minutes. Fold cabbage mixture into the mashed potatoes.

Cool potato mixture slightly, heat butter/oil in a large non-stick skillet. Shape the potato mixture into patties, cook patties over medium heat until underside is brown; about 5-8 minutes, turn over, add more butter/oil and cook 5-8 minutes.

I like to serve this with Bacon and Eggs
