DOTTY'S DINER 5-STAR MEATLOAF
Best recipe for meatloaf. Very moist and loaded with flavor. Serves 6 to 8
|1||large onion, chopped||1|
|2||Cloves garlic, minced||2|
|1-1/2 cup||Italian seasoned bread crumbs||375 mL|
|3/4 cup||Milk||200 mL|
|2||Eggs, slightly beaten||2|
|1/4 cup||Catsup or chili sauce||50 mL|
|1 tbsp||Dijon mustard||15 mL|
|2 tsp||Salt||10 mL|
|1/4 tsp||Pepper||1 mL|
|2 tbsp||Parmesan cheese||25 mL|
|1 tbsp||Worcestershire sauce||15 mL|
|1/4 cup||Chopped fresh parsley||50 mL|
|2 lbs||Lean Ground Beef||1 kg|
|1/4 cup||Catsup||50 mL|
|2 tbsp||Brown sugar||30 mL|
|2 tsp||Cider or white vinegar||10 mL|
Preheat oven 350°F [180°C].
On medium heat, cook onion and garlic in a bit of oil until soft. Set aside.Put bread crumbs in a large bowl, Combine milk, eggs and next 7 ingredients. Stir into bread crumbs. Add ground beef and the onion and garlic mixture. Using your hands (wear disposable gloves if you have any); knead together very well.
Place meat in a 9x5-inch [23x13 x cm] loaf pan, shape into a loaf by pressing down along the sides. Bake at 350°F for 40 minutes. Remove meat loaf from oven, drain any fat. Mix catsup, brown sugar, and vinegar and spread over loaf. Return to oven; bake an additional 20 to 30 minutes. Allow to rest for 5 minutes before slicing.
