SALMON CAKES/PATTIES |

These delicious salmon patties are nice and crunchy on the outside and soft and light salmon flavor on the inside. Serve with a simple homemade tartar sauce. Serves 2 |

1 | Egg | 1 |
7-1/2 or 8 oz | Can red salmon, drained and reserve juice | 213 g |
1/4 cup | Finely chopped onions | 50 mL |
2 tbsp | Fresh parsley | 30 mL |
1-1/2 tsp | Lemon juice | 7 mL |
2 tbsp | Salmon juice | 25 mL |
1/2 cup | Fine bread crumbs | 125 mL |
1 tbsp each | Oil and butter | 15 mL |

Drain and mash salmon lightly, reserve juice, set aside. Mix together salmon, eggs, onions, parsley and lemon juice. Add bread crumbs and 2 tbsp [25 mL] reserved juice. Add more juice if mixture too dry. Form into small patties and fry over medium heat, in a mixture of oil and butter,adding more if needed, until heated through and nicely brown. Makes about 10 small patties. Serve with Tartar sauce |
