SALMON CASSEROLE

When you forgot to take something out of the freezer, get out that can of salmon and in less than an hour you'll enjoy this delicious creamy casserole. Serves 2

2-1/2 tbsp Butter 35 mL
3 tbsp Flour 50 mL
1/2 tsp Salt 2 mL
1 tsp Onion powder 5 mL
1/8 tsp Pepper .5 mL
2 cups Milk 500 mL
1 tbsp Fresh chopped chives or 1 tsp[5 mL] dried 15 mL
7-1/2 or 8 oz Can red salmon 213 g
1 Small tin tiny peas, drained 1

Sauce In microwave, melt butter; add salt, onion powder, pepper and flour. Combine, then add milk, stir and microwave stirring occasionally until sauce thickens. Add chives, cleaned salmon pieces and peas.

Bake in 350°F [180°C] till heated through, about 1/2 hour or so. Serve with potato.

NOTE If using dried chives microwave along with the sauce ingredients
