Marinade in a flavorful combination of soya sauce, orange juice and herbs. This marinade goes well with most fish. Serves 4.

4 Swordfish steaks 4
2 tbsp Soya sauce 25 mL
2 tbsp Orange juice 25 mL
1 tbsp Olive oil 15 mL
1 tbsp Fresh parsley; finely chopped 15 mL
1/2 tsp Fresh  lemon juice 2 mL
1 Garlic cloves, finely chopped 1
1/4 tsp Dried oregano, crumbled 1 mL
1 tbsp Tomato paste 15 mL
1/4 tsp Black pepper 1 mL

Combine all ingredients, mix well. Pour over fish in a shallow dish or ziploc bag. Let marinate one hour. Remove fish from marinade.

Grill over medium hot coals or on medium setting, brushing often with marinade, for 4  to 5 minutes per side  or until just firm to the touch.
