SUGAR PIE (Tarte au sucre)

A traditional rich Quebec sugar pie. This will satisfy every sweet tooth. Makes one 9 inch pie [22 cm]

1-1/2 cups Brown sugar 375 mL
1 tbsp Butter 15 mL
1/2 cup Milk 125 mL
1/4 cup Flour 50 mL
1 tbsp Corn syrup 15 mL
Pastry for double crust pie

Preheat over to 375F [190C].

  • In a sauce pan, mix the sugar and flour.  Add butter, corn syrup and milk; mix well.  Bring the mixture to a boil for a few minutes, then cool. 

  • Line pie plate with pastry, then fill and Cover with top crust, seal and flute edges, cut a few slashes in top.

  • Bake until golden, about 25 to 30 minutes.
