This dessert recipe was very popular in Quebec during the depression and remains a favorite in many French Canadian homes to this day.

2 cups Brown sugar 500 mL
2 cup Water 500 mL
1 tbsp Butter 15 mL
1/2 tsp Vanilla 2 mL

1/3 cup Cold Butter 75 mL
1 cup White sugar 250 mL
2 cup Flour 500 mL
Pinch salt
3 tsp Baking powder 15 mL
3/4 cup Milk 375 mL
1 tsp Vanilla 5 mL

In a large saucepan mix brown sugar and water together and bring to a boil. Reduce heat to simmer, add vanilla and butter, cover while preparing batter.

In a medium bowl, combine flour, sugar, baking powder and salt. Cut in butter until crumbly looking. Add milk and vanilla all at once and stir just until moistened. Drop large spoonfuls of batter into the boiling syrup. Cover and simmer, without removing cover, for 15 minutes or until a toothpick inserted in middle of dumpling comes out clean. Serve hot.
