No exaggeration these are the best peanut butter cookies. Use smooth or crunchy peanut butter. Makes 3 dozen cookies
White sugar, packed
Brown sugar, packed
Large Egg, beaten
oven 375°F [180°C].
In large bowl, beat together butter, peanut butter, white sugar and 1/4 cup brown sugar until light and fluffy. Beat in egg and vanilla.
Combine flour, baking soda and salt, then beat into butter mixture until blended. Sprinkle remaining 1/4 cup brown sugar on top of dough and gently fold so sugar granules are still visible.
Roll dough into teaspoonful-size balls and place 2 inches [5 cm] apart on ungreased cookie sheet. Using a fork, press criss-cross. Bake 8 (for chewy) to 10 minutes (for crispy)
