A wonderful adult dessert on a hot summer night. So refreshing and light. Serves 6

3 tbsp Melted butter 50 mL
1 cup Chocolate wafer crumbs 250 mL
1/4 cup Sugar 50 mL
1 cup Whipping cream 250 mL
2 tbsp Milk 25 mL
3-1/4 cup Miniature marshmallows 770 mL
2 tbsp Cream de cacao liqueur 25 mL
1/4 cup Green cream de menthe liqueur 50 mL
2 cups Vanilla ice cream 500 mL
Strawberries for garnish

  • Whip cream and chill.

  • Combine melted butter, wafer crumbs and sugar, line a 9 inch [22 cm] pie plate or press in bottom of a 8 to 9 inch [22 to 23 cm] springform pan. Bake in 300°F [150°C] oven for 5 to 8 minutes. Let cook completely.

  • Melt marshmallows with milk in microwave, cool completely, stirring occasionally. Add liqueurs. Fold in whipped cream.

  • Spread ice cream in pie crust. Pour marshmallow mixture on top. Freeze for at least 6 hours.

Serve garnished with a few slices of strawberries.
