Make ahead and store in the freezer for lunch box treats kids will love. Makes 24 bars

1/2 cups Brown sugar, packed 125 mL
1/4 cup butter, softened 50 mL
1 Egg 1
1/2 tsp Vanilla 2 mL
pinch cinnamon pinch
1 cup All-purpose flour 250 mL
1 cup Rolled oats 250 mL
1 tsp Baking powder 5 mL
1/4 tsp Salt 2 mL
1 ripe banana, mashed 1
1/3 cup Chocolate chips 75 mL

Preheat oven 350F [180C].  Grease 8-inch [2 L] square baking pan

  • In bowl, cream together butter, brown sugar, add  eggs, vanilla and cinnamon; mix  until blended. Sift flour, rolled oats, baking powder and salt together, gradually beat into butter mixture. Stir in banana and chocolate chips.  
  • Spoon into prepared baking pan; smooth top.  Bake for 30 to 35 minutes or until tester inserted in center comes out clean.  Let cool on rack.  Cut into bars
