APPLE SWIRL CAKE & GLAZE

This excellent and easy to make cake is made with a box of Golden or yellow cake mix and a can of applesauce. Topped with a delicious butterscotch glaze. Serves 8 to 12

1/4 cup White sugar 50 mL
2 tsp Cinnamon 10 mL
1 pkg Golden/yellow cake mix 1 pkg
14 oz can applesauce 398 grams
3 Egg 3

GLAZE
1/4 cup Butter 50 mL
1/4 cup Brown sugar, packed 50 mL
1 cup Icing sugar 250 mL
1 tsp Vanilla 5 mL
3 tbsp Hot water 50 mL


Preheat oven to 350°F [180°C] Grease Bundt pan.

CAKE
Combine sugar and cinnamon. Set aside

Blend cake mix, applesauce and eggs until moistened. Beat for 2 minutes at high speed. Pour 1/2 batter into cake pan. Sprinkle surgar and cinnamon mixture on cake. Cover with remaining batter. Bake for 35 to 45 minutes. Cool in pan 30 minutes. Turn onto serving plate and cool completely

BUTTERSCOTCH GLAZE
Melt butter thoroughly in saucepan. Add brown sugar. Cook on medium heat to make a syrup. Add icing sugar and vanilla. Add water a little at a time until glaze can be poured easily over cake.
