Oven barbecued loin pork chops

4 Loin pork chops 4
Salt & Pepper to taste
1/4 cup Flour 50 mL
1 tbsp Olive oil 15 mL
1 tbsp Butter 15 mL
1/4 cup Finely chopped onions or shallots 50 mL
1/4 cup Chopped Celery 50 mL
2 tbsp Brown Sugar 30 mL
Juice of 1/2 lemon
1/2 tsp Salt 2 mL
1/8 tsp Red Pepper Flakes .5 mL
1/8 tsp Dry Mustard .5 mL
1/2 tsp Chili Powder 2 mL
1/2 cup Water 125 mL
1/2 cup Tomato Sauce 125 mL

Season chops with salt and pepper, coat in flour and brown in oil. Place in ovenproof dish. Mix remaining ingredients together and pour over meat. Cover with foil and bake at 350 degrees F for 1 hour, basting occasionally.

Note:Can substitute the water and tomato sauce with 1-1/4 cups canned diced tomatoes. I make mine with the boned chops about 1/2 inch thick, but any size pork chop will do.

You can also double this recipe and freeze those leftovers.
