BANANA CAKE

Very easy and delicious old favorite. For maximum flavor and moistness, use very dark, overripe bananas. Makes one 9x9 inch cake.

1/2 cup shortening, softened 125 mL
1-1/4 cups white sugar 300 mL
2 Eggs, beaten 2
1 cup ripe banana, mashed 250 mL
5 tbsp Cold Milk 75 mL
1 tbsp Hot water 15 mL
1 tsp Baking soda 5 mL
1 cup All-purpose flour 250 mL
1 tsp Baking powder 5 mL
1/4 tsp Salt 1 mL

CREAM CHEESE FROSTING

3-4 oz Cream Cheese, room temperature 90-120 g
1/4 cup Butter, soften 50 mL
1/2 tsp Vanilla 2 mL
1-1/2 cups Powdered sugar (icing sugar) 375 mL


Preheat oven 350°F [180°C].  Grease 9x9inch [22x22 cm] square baking pan

  • In bowl, cream together shortening, sugar, add  beaten eggs and banana; mix  well. Mix together the milk, hot water and baking soda. Combine flour, baking powder and salt, and add to the banana mixture alternately with the milk mixture. Beat well.
  • Pour into prepared pan and bake for 45 minutes. Frost with cream cheese frosting.
  • CREAM CHEESE FROSTING
    Combine cheese, butter and vanilla. With an electric mixer, beat until light and fluffy. Gradually add 1 cup of powdered sugar, beating until light and easy to spread. Add additional powdered sugar for more body.
