ARTICHOKE SALAD

Makes a wonderful first course for your next dinner party. Artichoke, celery hearts and almonds mixed with a mayo and ketchup dressing; served on lettuce leaves. Serves 4.

|
Drained & chopped artichoke (not marinated)

| 2 tbsp

Mayonnaise
|
25 mL
|
| 1 tbsp
|
Ketchup
|

|

Celery Heart stalks 1/2-inch [1 cm] pieces

Almonds slivered
|

|
|
|
Salt & Pepper to taste

| 1 tbsp
|
Olive Oil
|
25 mL
|
| 1 tsp
|
Fresh parsley chopped
|
5 mL
|
|
Combine
all ingredients and chill for at least 1/2 hour.
Serve on leaves of lettuce.
I usually use Boston lettuce, but any kind will do.
