LAST MINUTE APPETIZERS
ITALIAN CHEESE BREAD
Mix together 1 cup each [250 mL] of mayonnaise and grated Parmesan cheese, and 1 tsp [5 mL] chopped chilies or crushed red pepper (optional). Place in a small oven proof dish and cook at 400°F [200°C] for 10 to 15 minutes or until brown on top. Slice a french baguette bread thinly and broil in oven (be sure to watch it carefully). Spread mixture on top. No one will believe how simple this was. Serves 4.
Put a dab of chili sauce or seafood sauce on round cracker. Put a cocktail shrimp in center.
SOUR CREAM DIP
Stir together 2 cups [500 mL] sour cream with 1 envelope dry onion soup. Chill Serve with chips or vegetables.
Using several stalks, fill with cream cheese or your choice of spread. Beginning with smaller stalks, reshape to resemble original bunch of celery, adding more stuffing to hold together. Wrap snugly in waxed paper and chill. To serve, slice thinly into flowers.
SHRIMP CHEESE SPREAD
Pour seafood sauce or chili sauce over block of cream cheese. Arrange small, drained shrimp over top.
SUPER DIP FOR POTATO CHIPS
An old recipe that we've been making at Christmas time since I was a child. I still love it. Beat together a block of softened cream cheese with enough mayonnaise for easy dipping. Add about 2 tbsp. [25 mL] of relish (more if you prefer). THAT'S IT..
Place an 8 oz [250 g] block of cream cheese into a baking dish, cover with jar of salsa sauce and top with 1 cup [250 mL] grated cheddar cheese. Bake for 10 - 15 minutes until heated through. Serve with Tortilla Chips. Simple and Delicious!
POLYNESIAN CREAM CHEESE
Place an 8 oz [250 g] block of cream cheese into a small bowl or plastic bag. Pour 1/3 cup [75 mL] of Soy sauce over top. Refrigerate for several hours turning occasionally. Place on serving plate sprinkle with 1-2 tbsp. [15-30 mL] of toasted sesame seeds. Cheese may also be rolled in seeds, using enough to cover. Serve with crackers.
Mix 6 oz. [170 g] of prepared mustard with 10 oz. [285 g] currant jelly in a double boiler. Diagonally slice 1 lb. [450 g] (8-10) frankfurters/Vienna sausages or cocktail wieners in bite size pieces. Add to sauce and heat through. Serves 10.
Consider "fruit on a stick" skewers for picnics and barbecues. They're colorful, easy to serve and delicious. Thread whole stemmed strawberries and a selection of fruit chunks onto bamboo skewers. Serve with the main dish, drizzled with a little vinaigrette, or serve for a dessert unadorned.
