BACON & MUSHROOM ROLL-UP

Great make ahead hot finger food, and they can be frozen. Makes 30

4 slices Diced bacon 4 slices
2-1/2 cup Finely chopped mushrooms 375 mL
1 Medium onion, finely chopped 1
4 oz Cream cheese 125 g
15 slices Sandwich bread 15 slices
1/4 cup Butter 50 mL

In skillet cook bacon, mushrooms and onion for 5-8 minutes, or until bacon is cooked but not crisp. Stir in cheese until melted. Set aside.

Trim crust and flatten slightly with rolling pin.

Spread on 2 tbsp [25 mL] mix and roll up jelly roll fashion, secure with toothpick. Place seam side down on baking sheet. Cover, chill for one hour or freeze. If frozen let stand at room temperature 30 minutes before baking.

Brush rolls with melted butter.

Bake 375°F[190°C] for 10-15 minutes. Cut in two.
