BRUSCHETTA WITH PEPPERONI

This version comes topped with mozzarella, pepperoni and plum tomatoes.  Serve as an appetizer or a flavorful snack.
Baguette
Mozzarella,  Sliced
Plum tomatoes, Sliced
1 Baguette 1
1 or 2 Garlic clove, halved 1 or 2
Olive oil
Pepperoni Slices
Salt and Pepper
Chopped fresh basil

Cut baguette in half and slice each half in horizontal pieces. Size is optional, larger for a snack and small for an appetizer. Slice each plum tomato into about 6 slices.

Broil bread, cut side up, and toast lightly. Rub cut sides of the garlic clove on the toasted sides of the bread, then drizzle with olive oil.

Top each toast with a few slices or pepperoni, then mozzarella, and top with a few slices of tomato. Brush the tops with a little more olive oil. Season well with salt and pepper and sprinkle with basil.

Place again under broiler and toast for 2-3 minutes or until the cheese has melted. Remove and serve hot.
